Small 'designer' finger-sandwiches that are pressed out into nice shapes with a cookie cutter. This way you can do festive shapes like stars or hearts and angels - sandwiches don't have to be boring, so this is a fun way to make them look really nice and easy to eat. Make the trout patee first. It will be made with hot smoked trout, cream cheese, fresh dill and lemon juice. Just use a fork to mix it up into a chunky spread. Then press out the shapes on the bread and the sliced cucumber using the cookie cutter shapes, and then spread the shapes with a smoked trout patee and quickly assemble the lot.
