Dark chocolate and basil mousse with sugared berries

Go green with basil bursting with fragrant flavour to give a simple dessert an aromatic kick!
(serves 6)
170g good-quality dark chocolate, chopped 80ml milk 6 sprigs basil 1 egg yolk 4 egg whites 20g castor sugar basil-sugared berries*, to serve
Melt the chocolate and set aside. Bring the milk and basil to the boil. Allow to cool and stand for 1 hour to infuse. Strain and bring the milk to the boil again. Pour the warm milk onto the melted chocolate and mix well. Add the egg yolk and mix thoroughly. Whisk the egg whites to stiff peaks, then add the castor sugar gradually. Fold ¹/³ of the whites into the chocolate followed by the rest.
Pour into cups and chill for 1 hour before serving with the berries.

Blend 1-2 sprigs of basil with ½ cup sugar until combined.
Dip berries into egg white or melted chocolate and then
into the basil sugar. Allow to dry.
