Easter Recipe - Creamed Spinach

CREAMED SPINACH
Recipe by Jenny Kay from Angela Day Kitchen


Ingredients:

2 bunches of spinach
1 garlic clove
1 small onion
30ml butter
15ml flour
125ml milk or cream


Method:

Fry the garlic and chopped onion in oil until soft.
Wash the spinach leaves and remove the hard centre spine. Put the spinach in a saucepan without water and cook gently for 10 min. Drain the spinach well and press out as much liquid as possible. Chop well and add the fried onion.
Melt  butter  then blend in the flour.
Gradually stir milk or cream.  Stir till smooth and boiling. Add the spinach.
Season with salt, pepper and a good grating of nutmeg.
