2 cups old-fashioned oats 1⁄2 cup f laked almonds, coarsely chopped 1⁄2 cup pecan nuts, coarsely chopped 1 cup coconut 1⁄2 cup mixed seeds 3⁄4 cup flaxseed 45g butter 2⁄3 cup honey 1⁄4 cup light brown sugar 1t vanilla extract pinch of salt 1⁄2 cup finely chopped dried fruit 1⁄2 cup raisins 1⁄2 cup dried cranberries or goji berries
Method:
Preheat the oven to 180°C. Combine oats, nuts and coconut and toast on a baking sheet in the oven until lightly browned. Transfer to a bowl and mix in the seeds and flax. Reduce oven temperature to 160°C. Bring butter, honey, brown sugar, vanilla and salt to a boil and cook for 1 minute. Pour over the toasted oats mixture. Add the fruit, raisins and berries and press into a greased baking tin. Bake for 20-25 minutes until golden brown. Cool for 2-3 hours before cutting into bars. Store in an airtight container for up to two weeks.
TIP This recipe is incredibly flexible, so tailor it to suit your dietary needs by simple substitution; don't like coconut? Replace the ingredient with more nuts or dried fruit but keep the quantities the same.
