We met the Top Chef team at Joburg’s Mad Giant Brewery and new Urbanologi restaurant, which work side by side in brainstorming new ideas. Just the kind of venture to excite Lorna Maseko, private chef turned TV food celebrity, Neill Anthony and process engineer turned journalist and chef Lesego Semenya.
The restaurant’s Avant Garde style is reflected in a space celebrating creative thinking. Furniture and interior design is by Haldane Martin and the beer and Asian food connection was explained by Manager Rogerio Pedro and a brewer with a PHD, Eben Uys.
Neill Anthony has been a patissier at Gordon Ramsay’s Hospital Road in London and knows his way around a cut of beef too. The dishes Neill and Lesego were preparing were conceived by Head Chef Angelo Scirocco, South Africa’s entrant in 2015’s San Pellegrino Young Chef awards in Milan. Having cheffed for establishments like Richard Branson's private game reserve Lesego commands a range of techniques.
In the design or food – a compelling concept is a major factor in the success of a restaurant. It’s central to how the cheftestants are judged by Lesego and Neill on each week’s episode of Top Chef and Urbanologi’s theme is a bold one. Top Chef South Africa heads towards the final reckoning, August through September on SABC3, Tuesdays at 8pm.
