Lava, Peanut Butter and Chocolate Pudding

Preparation time: 10-15min (+15minutes chilling time)
Cooking time: 8 min
100g Dark chocolate, roughly chopped
100g butter, cubed
2 Free Range Eggs
2 Free Range egg yolks
100g Cake flour
4 Tablespoon peanut butter
Preheat the oven the 180’c. Melt the chocolate and butter in a double boiler, stirring, until smooth. In a separate bowl, beat the eggs, egg yolks and sugar until light and fluffy. Fold in the flour, and then add the chocolate mixture and mix. Chill for 15 minutes.
Half fill 4 greased ramekins with the mixture, then place 1 tablespoon of peanut butter in the centre of each ramekin. Top with the remaining chocolate mixture. Bake for 8 minutes, and then turn out onto serving dishes. Sprinkle with smoked salt before serving.
