These treats are perfect for an afternoon tea, but will also work as a dessert with coffee. You can make your own lemon curd and biscotti, but if you are too busy, rather buy it. It is widely available at supermarkets and deli’s.
1 cup mascarpone cheese
1 cup lemon curd*
biscotti (or other biscuits), to serve
Whip the mascarpone until smooth. Mix lemon curd with mascarpone and serve in small glasses with biscotti.
*To make your own lemon curd, mix 90g butter, ½ cup fresh lemon juice, 1 cup caster sugar and 2 eggs. Place the bowl over simmering water and stir continuously for 6-10 minute until the mixture thickens. Remove from the heat and allow to kief before using. (The lemon juice can be replace with orange or lime juice).
