Sesame Bean Salad
SILWOOD SCHOOL OF COOKERY RECIPE
250g fine French beans
45ml sesame seeds
60ml Greek yoghurt
40ml mild, homemade mayonnaise
30ml lemon juice
15ml chopped parsley
10ml sesame seeds, toasted
Trim, blanch and refresh the beans.
Toast the sesame seeds in a non-stick pan then grind to a powder in a pestle and mortar.
Mix sesame powder with the Greek yoghurt, mayonnaise, lemon juice and 5ml black pepper.
Season with salt to taste.
Arrange beans on a platter, drizzle over the dressing and garnish with chopped parsley and extra sesame seeds
