Ty Keogh's steak recipe

Ty's Steak

Steak - Sirloin or Ribeye in your chosen size
Olive oil
Salt
Pepper
3 cups flat left parsley
1 clove garlic
1/2 cup fresh mint
1 lime
2 lemons


For the steak:
Prep a good sized steak (preferably Sirloin or Ribeye) with salt, pepper and olive oil.
Panfry or grill the steak in an extremely hot pan/grill until an even medium rare.
 
For the board:
Coarsely chop 3 cups of flat leaf parsley, 1 clove of garlic and half a cup of fresh mint.
Zest 1 lime and squeeze 2 large lemons and add to chopped greens with a drizzle of olive oil.
 
To serve:
Take steak off heat and allow to rest on chopped greens for approx 3 minutes before carving against the grain of the meat into thin strips. Make sure that all the strips of meat are well coated by the greens and serve on the chopping board.
Accompany with fresh warm baguette and a simple green salad.
