If you love avocado and have run out of new ways to use it, I urge you to try this recipe. It might sound a bit unusual, but is delicious. (serves 4)
2 ripe avocados, peeled & stoned 3-4T mascarpone, cream cheese or ricotta 3T grated Parmesan 3T chopped Italian parsley 400g dried tagliatelle, cooked to packet instructions
Mash the avocado with the cheeses and season with black pepper and a little salt. Add boiling water from the pasta to help blend the sauce. Stir in half the parsley. Mix in the cooked, warm pasta and serve immediately, sprinkled with the remaining parsley and extra Parmesan, if desired.
