This beautiful dessert makes for an ideal dinner party last course. It is easy to prepare and will happily cook on it’s own while you enjoy yourself. Prepare the recipe up until just before you have to place it in the oven before your guests arrive. Then just pop in the pre-heated oven an hour before you need it.
(serves 8)


4 ripe pears*
8T soft butter
1 vanilla pod
1 cup sweet dessert wine
whipped cream, to serve



Cut the pears in half, press softened butter into the hollows and place skin side up on a baking tray. Cover with sweet wine to about halfway up the sides of the pears and add a split vanilla bean to the wine. Cover with foil and bake in a moderate oven for an hour. Serve with a drizzle of the reduced syrup and a dollop of cream.
