3 Ingredient Condensed Milk Cookies

A delicious, sweet cookie that’s incredibly versatile – simply add your favourite ingredients like nuts, choc chips, or coconut.
If you’re using a whole tin of condensed milk (395g) simply double this recipe.
Makes 30
200g butter, softened
200g condensed milk (see home-made recipe below)
250g self-raising flour
Preheat the oven to 180C. Grease and line two baking sheets.
Cream the butter until light and fluffy.
Add the condensed milk and mix until just combined, scraping down the sides of the bowl.
Mix in the self-raising flour until a soft, smooth dough forms. Add a little extra flour if necessary but make sure not to overmix the dough.
At this stage you can add any extra ingredients – chocolate chips, nuts, sprinkles, coconut, Milo,
Roll tablespoonfuls of cookie dough (you can roll the balls in sprinkles or coconut at this stage too) and place them on the prepared baking sheets, press down lightly to flatten.
Bake in the preheated oven for 12-15 minutes or until golden.
TIP: Roll any remaining cookie dough into a log, wrap in plastic wrap and freeze. Then simply slice into discs, place on a greased baking sheet and bake when a craving strikes.
Homemade condensed milk
Makes 3 cups
1 ¼ cups powdered milk
¾ cup Selati Castor Snow
60g butter, softened
1/3 cup boiling water
Drop of vanilla essence
Place all the ingredients in a blender and blend until smooth and thick.
Pour into a jar and store in the fridge for up to 1 week.
