Apple crostada with cheddar crust

Apple crostada with cheddar crust (serves 10)
2½ cups cake flour 225g cold butter, chopped ¼ cup ice water 1 cup grated mature cheddar cheese 1 egg, whisked 2 apples, sliced into wedges ½ cup sugar 2T flour 2T fresh lemon juice ¼t ground cinnamon ¼ cup apricot jam, warmed
For the cheddar crust: blend flour and a pinch of salt in a food processor with butter until coarse. Add enough water to form a dough. Add cheese and pulse until combined. Wrap and chill for 1 hour. Roll out to form a disc and refrigerate. For the filling: toss apples, sugar, flour, lemon juice and cinnamon together. Spread filling over pastry, leaving a border. Fold edges in to form a crust, brush with egg wash and sprinkle with a little sugar. Refrigerate ½ hour. Bake at 180˚C until crust is golden (about 80 minutes). Cool and brush with apricot jam.
