CURRIED SWEET POTATO
2 sweet potatoes (cut into bite sizes)
5ml curry powder
2ml cumin seeds (toasted)
5ml coconut oil
15ml butter
10ml honey
Salt & pepper
Melt coconut oil and butter together, then add all spices. Make a parcel using a foil or grease proof paper, then throw in the sweet potato pieces followed by your spice mix and honey, mix well, close the parcel and bake in the oven for 20-30 min on 180degrees
FRENCH ONION SOUP
4 red onion sliced
2 garlic cloves
Few fresh spring thyme
Salt and pepper
Beef stock 1.2L
Bruschetta 1 loaf
Parmasan cheese grater
Chopped parsley for sprinkling
In a baking tray place your sliced onion, garlic, thyme and rub in your oil. Sprinkle some salt and pepper and mix it together using your hands. Place your tray in the oven on 180 degrees for 40min.•Take the tray out of the oven and place the onion mix in a pot with the beef stock and allow to cook. While the soup is cooking, slice some bruschetta, top them with grated parmasan cheese and set aside. •Pour the soup in an oven friendly soup bowl, check seasoning, place your sliced cheese bruschetta and bake in the oven for 5min (until the cheese has melted and golden brown). Sprinkle with some chopped parsley and enjoy.
