Chocolate and red wine zabaglione

Chocolate and red wine zabaglione
(serves 4)
4 egg yolks ¼ cup sugar ¼ cup red wine 100g dark chocolate, melted
Whisk the yolks and sugar in a glass bowl until creamy and thick. Set bowl over a pot of simmering water, add the red wine and whisk until doubled in volume, scraping down the bowl. Remove from the heat and beat until cool. Fold in the melted chocolate and divide between 4 glasses. Serve with spicy poached plums.
