Chocolate fondants with rum ’n raisin sauce

Chocolate fondants with rum ’n raisin sauce

(serves 4)

300g dark chocolate, chopped
200g butter, chopped
4 eggs
4 egg yolks
½ cup castor sugar
½ cup cake flour, sifted

Sauce
½ cup dark brown sugar
½ cup golden or maple syrup
1T butter
¼ cup dark rum
¼ cup mixed raisins

Melt the chocolate and butter in a saucepan until smooth. Whisk the eggs, yolks and sugar. Whisk in flour and chocolate mix. Divide between 4 greased moulds and bake at 180°C for 20 minutes or until puffed. For the sauce, heat the sugar and syrup until melted. Remove from heat and add the butter, rum and raisins, stirring until melted. Turn fondants out immediately and serve with ice cream and rum ’n raisin sauce.
