Hazelnut praline custard slices
What is puff pastry?
Puff pastry is a rich and delicate pastry made up of very thin layers, it has equal amounts of fat and flour. Making it is a lengthy procedure, but fortunately nowadays you can purchase good-quality puff pastry from all big supermarkets, so there is no need to make it yourself. Some historians date puff pastry back to 17th-century France, although another school of thought points to earlier documents that suggest puff pastry was already enjoyed as far back as the time of ancient Greece. Here's a delicious sweet snack you can make with puff pastry to impree your guests.
(makes 6)
1 packet puff pastry ½cm thick
100g sugar
100g chopped hazelnuts
1t vanilla extract
1T Frangelico
Custard
Heat oven to 220ºC. Roll out 1 packet puff pastry ½cm thick, cut into 12 rectangles and bake until golden. Make praline by melting 100g sugar into caramel. Pour over 100g chopped hazelnuts on a lined tray. Cool. Break half into shards and blend the rest until fine. Make custard by whisking 450ml milk, 4T sugar, 3T cornflour and 2 egg yolks over low heat until thick. Stir in 1t vanilla extract, 1T Frangelico and fine praline. When cool, split pastry rectangles in half and fill with custard. Decorate with more custard and hazelnut shards.
