Ice cream cupcakes
Ice cream is the ultimate warm-weather dessert. And these easy ideas with store-bought ice cream will leave guests dazzled and hosts chilled!
Scoop out a golf-ball-size piece of cake from the top of a cupcake or muffin. Spoon a scoop of ice cream into the cavity and freeze until hard. Place chocolate fudge icing* in a piping bag and pipe on top of the cupcake to cover the ice cream. (Add cherries, liqueur or various sweets as well before covering with the icing.) Freeze for at least 1 hour prior to serving.
* Make the butter icing (for 6 cupcakes) by melting 250g dark chocolate, ½ cup cream and 70g butter over simmering water. Allow to set before beating with an electric beater until thick and fluffy.
