Jaco De Bruyn's Healthy Fishcake Muffins
Ingredients
800g fillet hake skinless
2 cups broccoli
2 cups basmati rice
6 egg whites
2 cups grated mozzarella cheese
Thyme
Spring onion
Salt
Chillies / canyon pepper
Method
Pre heat oven at 180c
Bake the hake fillets for about 25-30 min until cooked.
Boil the basmati rice until cooked and set to cool
Boil the 2 cups of broccoli until soft
Split the egg and pour egg white into a bowl
Carefully flake the hake
Use a big mixing bowl to add all ingredients together
Add the flaked hake, soft boiled broccoli and rice in the mixing bowl,
Use a fork to mush everything together
Add the 6 egg whites, grated cheese, thyme and finely chopped spring onion to the mixture
Add chillies and salt to taste and mix everything together
Use spray and cook or butter to glaze the muffin tray so it doesn’t stick to tray
Carefully add your mixture in each tray till full
Bake for 25-30 min
