1 cup leftover mashed potato 2 spring onions, finely chopped 1T chopped parsley 2T pancetta or salmon, chopped flour, to dust 4 poached eggs (see topbilling.com for step-by-step instructions) Parmesan shavings, to garnish
Mix the mash with the onions, parsley and pancetta. Shape into cakes, dust with flour and shallow-fry until golden. Serve topped with poached eggs and sprinkled with Parmesan shavings.
