Pork chops with garlic
This is one of my favourites. It is really easy – ideal for a weeknight after a long day at the office. You can add sliced apples and if you would like to replace the cider with something non-alcoholic, use apple juice. Don’t be afraid of the amount of garlic, it becomes wonderfully sweet.
6 pork chops 3 whole heads of garlic 1-2 cups cider
In a cast iron or similar casserole, brown the chops in a little olive oil. Remove from the heat. Scatter the unpeeled garlic cloves over the chops and cover with cider (allowing fat pieces to stick out in order to crisp up in the oven, but making sure the garlic is submerged). Season with salt and pepper. Roast at 220ºC for 20 minutes, then serve with mash and steamed greens.
