Sesame Bean Salad

Sesame Bean Salad SILWOOD SCHOOL OF COOKERY RECIPE
Serves 6
Ingredients:
250g fine French beans dressing: 45ml sesame seeds 60ml Greek yoghurt 40ml mild, homemade mayonnaise 30ml lemon juice garnish: 15ml chopped parsley 10ml sesame seeds, toasted
Method:
Trim, blanch and refresh the beans. Toast the sesame seeds in a non-stick pan then grind to a powder in a pestle and mortar. Mix sesame powder with the Greek yoghurt, mayonnaise, lemon juice and 5ml black pepper. Season with salt to taste. Arrange beans on a platter, drizzle over the dressing and garnish with chopped parsley and extra sesame seeds
