Seth Rotherham's Chicken Skewers & Tomato Salad

Seth Rotherham's Recipe for Chicken Skewers & Tomato Salad

This is a good one for now summer braais!



Ingredients:

Skinless chicken fillets
1/2 cup olive oil
Juice of 6 lemons
8 tsp Coarsely ground black pepper

Tomatoes different colours
olive oil

wine vinegar
1 tsp Dijon mustard
1/4 tsp sugar

 

Chicken Skewers:

Buy skinless chicken fillets cut into big squares
Wooden kebab skewers which you soak in water for 30 minutes to swell
Thread the chicken onto the Kebab sticks
Place in a dish



Method:

Mix together
1/2 cup olive oil
Juice of 6 lemons ( keep the squeezed peels )
8 tsp Coarsely ground black pepper
Pour this over the chicken kebabs add sprigs of Rosemary into between the kebabs plus the squeezed lemon peels.
Marinade for 4 hours in the fridge
When braaing baste with the marinade.......delish.



Tomato Salad:

Get a variety of tomatoes different colours, shapes and sizes ( see pic )
Mix olive oil, wine vinegar ( 2 to 1 ), 1 tsp Dijon mustard and 1/4 tsp sugar for your dressing.
Pour over toss and serve
