Seth Rotherham's Roast Summer Veggie Dish
Ingredients
:
2 Aubergines not big fat ones but long slimmer ones if possible 5 Ripe firm Roma tomatoes
4 Courgettes ( baby marrows ) if possible round ones not sure if you can get in SA otherwise big one so that all the veg is about the same diameter. Whole head of garlic Small bunch of Rosemary broken into little sprigs. Nomu Veggie Rub 1/3 cup Olive oil
Method:
Slice all the veg in rings, layer them alternating from the outside until you end up in the centre where you place the Garlic, add the sprigs of Rosemary in between the veg, look at my photo. Sprinkle liberally with Nomu Veggie rub, drizzle with olive oil
Roast open in an oven temp 200 C for an hour.
Keep an eye on it as it may dry out, if it looks dry drizzle with more olive oil.
