Shiraz granita
(serves 8-10)

75g sugar
500ml good-quality shiraz
500ml sparkling wine

Dissolve the sugar in the wine, then pour the mixture onto a metallic tray and place in the freezer for 24 hours. Before serving, break up the mixture with a spoon and place pieces in a champagne glass (or any other container which fits your theme), top with sparkling wine and serve.
