Spiced Poached Autumn Fruit

Spiced Poached Autumn Fruit
Serves 4
Recipe by Tjaart Walraven
Ingredients:
- 1 bottle red wine, Cabernet Sauvignon
- 250 ml water
- 150 g caster sugar
- 1 vanilla pod cut in half, length ways
- ½ cinnamon stick
- 5 black peppercorns
- 1 bay leaf
- 2 cloves
- 2 slices lemon, skin on
- 2 slices orange, skin on
- 4 ripe pears, peeled
- 1 baby pineapple, peeled, quartered and cored
- 1 Quince, peeled, quartered and cored
- 1 Granny Smith apple, peeled, quartered and cored
Method:
- Place a saucepan on a high heat
- Pour the red wine into the hot saucepan and bring to the boil rapidly
- Add the water, caster sugar, citrus slices and all the spices, boil for 1 minute
- Add the pears and quince for 20 minutes
- Cover with a piece of grease proof
- Add the pineapple and apple segment’s, poach for a further 10 minutes
- Allow the fruit to cool in their own cooking juices before serving, preferably the next day.
