Spiced yellow fin tuna

Spiced yellow fin tuna with citrus salsa

This is one of my favourite tuna recipes. Easy and quick with a wonderful balance of flavours.
4 yellow fin tuna steaks (each 100g, 2½ cm thick) 1t salt 2t lime juice 6 cloves garlic, finely chopped 2T fish masala 2T oil 2T chopped fresh coriander Citrus salsa 4T coconut milk 1T palm (or brown) sugar, to taste 1 mandarin (optional), peeled & segmented 1 lemon, peeled & segmented 1 orange, peeled & segmented ¼ pink grapefruit, peeled & segmented ¼ pineapple, peeled & chopped
Clean and dry the tuna. Mix the salt, lime juice, garlic and masala and coat the steaks. Marinate for 1 hour in the fridge. Prepare the citrus salsa. Heat the coconut milk and dissolve the sugar in it. Cool. Combine the fruit (membranes removed where needed).
Brush the fish with the oil and cook for about 4 minutes on a side in a griddle pan, over coals or gas. Serve with the salsa and coconut milk, garnished with coriander.
