Strawberry and Brie salad

I had this salad for the first time at the opening of a boutique hotel in Provence, France. Lunch was served on a terrace in front of a Medieval castle, with a heavenly view of the vineyards down in the valley. There was a fountain rippling happily, flower pots filled with bright splashes of colour everywhere, and the sound of church bells in the distance. Even though we were sitting outside, the tablecloths were starched white damask, with silver cutlery and crystal glasses. This salad was served as a starter and the sugarsweet strawberries and creamy Brie cheese tasted like summer. The salad dressing is my own creation and, even if I say so myself, it’s second to none of the masterpieces concocted by nose-in-the-air French chefs. Do give it a try. It’s easy to make and will add that extra touch to any champagne breakfast. C’est magnifique

Serves 4 -6

Ingredients:

Salad dressing
45 ml (3 T) good olive oil
15 ml (1 T) balsamic vinegar
5 ml (1 t) Dijon mustard
2,5 ml (1/2 t) castor sugar
5 ml (1 t) black pepper
2,5 ml (1/2 t) salt

Salad
70 g (2 handfuls) baby spinach leaves
250–300 g strawberries, well washed
125 g Brie, sliced
125 ml (1/2 c) flaked almonds, roasted
coarsely ground black pepper to taste

Method:
Salad dressing
• Mix all the dressing ingredients together and season to taste.

Salad
• Pile the baby spinach leaves on a serving platter. Scatter the strawberries over the spinach (halve any strawberries that are too large). Arrange the slices of Brie over the salad and scatter over the almonds.
• Strawberries love freshly ground black pepper so add a generous grinding, according
to taste.
• Serve the salad with the dressing on the side so that guests can help themselves.
This salad is equally delicious without the dressing.

Tip:
To make the salad dressing in an instant, place all the ingredients in a screwtop jar, screw the lid on tightly and shake well. This will mix all the ingredients together well and it also means less washing up..
