Sweet & Sour Pork
600g pork fillet or loin, cubed 60g cornflour 1 egg 2 onions, chopped 2 red peppers, cut into strips 3 spring onions, chopped 1 red chilli, seeds removed and chopped 1/2 cup rice vinegar 1/4 cup tomato sauce 1-2T soy sauce 1 cup honey 1t Chinese five spice 2 star anise 1t fish sauce
Mix the pork in a bowl with half the cornflour, the egg and 2T water. Heat some oil in a wok or frying pan and fry the pork until golden and cooked. Reserve. Adding more oil if needed, soften the onion, peppers, spring onions and chilli in the same pan. Add the rice vinegar, tomato sauce, soy sauce, honey, spice and fish sauce. Simmer for five minutes. Mix the remaining cornflour with 2T water and add to the sweet-and-sour mixture. Simmer until it thickens then add the meat. When hot, serve with rice, drizzled with a little honey, if desired.
