Swiss Roll Ice Cream Cake
This impressive cake will sit happily waiting in the freezer until just the right moment to take a bow.

Strawberry Swiss roll
Strawberry ice cream
Fresh (or frozen) berries of your choice
Sugar
Last-minute method
Line a round cake tin with clingwrap. Cut the Swiss roll into slices and line the bottom and sides of the tin. Fill with ice cream to the level of the slices on the sides. Freeze. Just before serving, heat half sugar, half water to form a syrup. Add berries to the syrup and mix. Place the cake on a serving plate and top with the berry mix.
