Top Billing attends a pastry master class with chef Karim Bourgi
In the right hands, food can be elevated to a form of art and Harmony recently got to watch a maestro work his magic. One of the world’s best pastry chefs, Karim Bourgi, was in South Africa to give a masterclass on creating treats that are almost too beautiful to eat.
Born in Senegal, to Lebanese parents, Chef Bourgi speaks five languages but is universally understood through his pastries. Followed by hundreds of thousands of social media fans, on a morning with Harmony he had a class of one.
Karim emphasises the importance of sourcing quality ingredients, respecting these in your preparation, and using simple but meticulous décor.
Chocolate disks and gold leaf finishes are a hallmark of Chef Bourgi’s work for a classic Parisian luxury brand – and he’s also in touch with popular trends.
For chef to modestly title the creation he made with Harmony a travel cake, it is an indication of why his masterclasses are so popular. On his South African visit, he also embraced local tradition by incorporating our indigenous rooibos into his pastry recipe.
He wasn't the only star of the day though, and credit largely goes to two others. Honoured to learn from the best were sisters Faaiza and Aneesa Omar, of popular homegrown brand The Stylish Bakers, and the minds behind the awesome master class.
Who says you can’t have your cake and eat it too? Harmony, here’s hoping you paid close attention, because next time you throw a dinner party, there are going to be some great expectations!
