Top Billing steps into the kitchen with chef Sizo Henna
This week on Top Billing we feature cooking show host, restaurant owner, father and a chef who’s a cut above the rest - Sizo Henna.
Home life is precious to the chef who’s cooked for President Ramaphosa, is host of SABC3’s Rustic Chakula cooking show and who recently opened his restaurant Blaque in Rosebank. We found him in his natural habitat.
Sizo’s day starts at 4 a.m. preparing breakfasts for clients, then managing his businesses, rushing to his restaurant for lunch until dinner is done. So, a day off with his wife and baby is a gift.
Sizo’s English Head Chef taught him British cooking, from his Sous Chef he got the hang of Spanish food and his Caribbean dishes he learned from a Jamaican classmate.
Having learned the broadest range of dishes and influences from time spent in kitchens from Geneva, Switzerland to Mumbai on The Sub-Continent, the chef’s next plan is to start his own farm to grow his own ingredients.
